I tried to get a shot of this before it was served but neigther of us could wait!! It is so good! One of the best breakfast casseroles around and super easy to make and if you have a bunch to feed you can't go wrong with this...

Here's the recipe:

One large baking dish (9x13x2, glass is best) lightly greased or sprayed with PAM

1 lb. sausage (what ever flavor you fancy, I like spicy hot) brown it in a skillet, or you can cut up strips of bacon and crisp fried or use ham.

While that is cooking, get a large bowl and add 3 cups shredded potatoes, you can make your own or just buy frozen.
Melt 1/4th cup butter, (30 seconds in microwave) pour this over potatoes in bowl and stir to coat. If you have bell peppers, and color, chopped up about a 1/2 to a full cup and add to this mixture. Pour this mix into the prepared baking dish. Set it aside.

Turn oven on to preheat to 375

In the bowl you just had the potato mix in add 12 oz. shredded cheese, I like medium cheddar, but you can use mild or sharp or even Jack or Swiss cheese if you prefer.
1 16 oz. tub small curd cottage cheese
1/2 cup chopped onion
1/4th tsp. pepper
10 large eggs

Add the meat you browned to this and stir until well mixed.

Pour this over the potato mixture and spread it evenly on top.

Put this in the hot oven and bake 1 hour. Let it sit 5 or 10 minutes then serve.

Last Sunday, I was trying to think of recipes that I hadn't made for awhile. One of those recipes was stuffed peppers. Here is the version I use (modified from Cooking Light):

2 servings prepared Minute brown rice
2 green bell peppers
1/2 lb. ground sirloin
1/2 cup chopped onion
1/4 cup chopped fresh flat-leaf parsley
1/2 tsp. paprika
1/4 tsp. salt
1/8 tsp. allspice
2 cups bottled tomato-basil pasta sauce
1/2 cup grated Parmesan cheese
1/4 cup dry red wine

Place prepared rice, cheese, and 1/2 cup of the pasta sauce into a large bowl. Cut tops of bell peppers and scoop out seeds and membranes. Place peppers, cut side down, into a 8-inch square glass baking dish and cover with plastic wrap. Microwave 2 minutes or until crisp-tender. Cool. Cook ground beef, onion, parsley, paprika, salt, and allspice in a skilet over medium-high heat until the meat is cooked and the onions are soft. Add beef mixture to rice mixture, stirring to combine. Add the rest of the pasta sauce and the wine to the skillet; deglaze the pan and bring sauce to a bubble. Place stuffed peppers in 8-inch square glass baking dish and add the pasta/wine sauce to the dish. Cover with foil. Bake at 450 for 10-15 minutes. Serve peppers with the extra sauce.
